I wish everyone a beautiful and joyful weekend♥ In celebration of the days ahead, I am sharing a very delicious pancake recipe. Enjoy!
Yield 12 pancakes
2 c buttermilk
1 large ripe banana, mashed
3 tbsp. melted unsalted butter
2 tsp. vanilla extract
2 1/2 c unbleached flour
1/4 c sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
Whisk buttermilk, mashed banana, eggs, butter and vanilla in large bowl. In a medium bowl combine flour, sugar, baking powder, baking soda and salt. Pour the dry ingredients over the banana mixture and mix until combined. Let the batter rest for 5-10 minutes (it should form bubbles & rise just a bit).
Melt a little butter or coconut oil in a large frying pan. Using a 1/3 cup measuring, pour batter into pan. The pancakes are ready to flip when the edges are bubbly and look a tad dry (about 1 minute). Flip and cook the other side until golden brown. Repeat.
Serve with sliced bananas, chocolate chips, sliced strawberries or blueberries.
